The difference is that in white diamonds the lack of color is key, while in champagne and chocolate diamonds, the more intense the color, the more valuable they are. Because some colored diamonds are comparatively less expensive than white diamonds, you can get a larger champagne or chocolate colored stone than you would get for the same price if you were buying a white diamond.
